Sunday Post: Brookies Recipe

After recovering from all the Christmas family meals, I decided to jump straight on Lily Pebbles'  dairy-free brookie recipe which sounded delicious! I served them when they were still warm and I must say that all my family (grandma included) enjoyed them and all the 40 freshly baked cookies were gone by the end of this evening. Slightly hard on the outside but spongie and gooey on the inside like a brownie.

-------------------------------------------------------------
The Ingredients...
45g cocoa powder
200g caster sugar
2 eggs
120g  flour
½ tsp salt
1 tsp baking powder
65ml vegetable oil
1 tsp vanilla extract
30g icing sugar

LET'S GET CRACKING!
-------------------------------------------------------------

  1. In a bowl, mix together the cocoacaster sugar and vegetable oil. Beat in eggs one at a time, then stir in the vanilla. Combine the flourbaking powder and salt; stir into the cocoa mixture. Cover dough, and chill for at least 4 hours.
  2. Preheat oven to 180 c/ gas mark 4. Line baking trays with baking paper. Pour icing sugar onto a plate and using a metal tablespoon, spoon and roll mixture into 2.5cm balls coating each one with the icing sugar before placing onto prepared trays.
  3. Bake in preheated oven for 10-12 minutes. Let them stand on the baking tray for a minute before transferring to wire racks to cool.

For a winter evening they are perfect to have with tea wrapped up in a blanket (this is optional, but trust me)
